"Bolly Cauli"

Last week I bought a cauliflower at the farmers market, and some potatoes. Every time these two get together in an Indian house, the end result is "Aloo Gobhi" (Aloo = Potato , Gobhi = Cauliflower), i.e., curried potato and cauliflower. My cookbook calls it "Bolly Cauli", from the movie "Bend it like Beckham", it seems. I haven't seen the movie, so I can't vouch for it.

It's a fairly simple dish to make, and tastes great.

You'll need:

  • A medium-size head of cauliflower, cut up into little florets
  • 2 medium potatoes, peeled and diced into 1" cubes (submerge them in cold water after cutting so they don't become brown)
  • 1 medium tomato, diced
  • 4-6 large garlic cloves, finely chopped
  • 1" piece of thick ginger, peeled and finely chopped
  • 1/4 tsp turmeric
  • 1/4 tsp red chilli powder (reduce to make it less spicy)
  • 1/4 tsp "garam masala" or curry powder
  • salt to taste
  • coriander (or cilantro) to garnish
  1. Heat 2-3 tbsp of oil on medium heat
  2. add the chopped garlic and ginger, and stir frequently till they become light brown
  3. Add the potatoes, turmeric, salt, red chilli powder
  4. Cook for about 5 minutes, till the spices are well mixed and have coated the potatoes
  5. Add the cauliflower, tomatoes and the garam masala
  6. Lower the heat the medium-low and cover the pot. Let them cook for about 20-30 minutes, stirring every few minutes to make sure that they don't stick. The juice from the tomatoes should prevent that, but it depends.
After it's done, garnish with chopped coriander and cover for a few more minutes. Serve with pita bread or soft tortillas (if you don't have 'roti' ).

In other news: the moong salad has become my lunch staple. I'm down with the cold/flu right now, so I'm having to survive on leftovers.
